Carrot top leaves can be used like parsley. Here I planted about one inch of the top of an organic carrot, keep some green stems or leaves attached, in soil to let the top grow.
It is a slow process. I didn’t think to mark this one with the start date.
You won’t grow another true carrot. You may get some spindly orange roots, which you can eat, but not a nice fat carrot.
This is a great way to keep scraps and continue getting nutrition and stretch food dollars.
Letting this one bloom to see if I can get seeds.
